Weeknight dinners can take up a lot of headspace, so we thought we’d share this recipe with you to help make your weeknight dinners a breeze. This 5-min Mexican fiesta featuring our Chipotle & Lime Beef Bars is our go-to when we are exhausted after a day in the office, yet after something nutritious and satisfying. This meal provides a great source of iron and protein thanks to the beef bars, and our famous creamy guacamole with biltong takes the flavour to new heights. Enjoy!

Ingredients
- 2 x Chief Chipotle & Lime Beef Brisket Bars, broken into pieces
- 6 x Blue Corn Soft Tacos/or soft tacos of choice – we love these ones
- ½ cup fresh or tinned corn
- ½ cup pickled red onions
Chief Creamy Guacamole with Biltong
- 1 large avocado, mashed
- ½ cup full-fat Greek yoghurt
- 1 lime, juiced
- A good pinch of sea salt and cracked black pepper
- ¼ teaspoon dried chilli flakes
- 1/2 cup coriander, roughly chopped
- 1 x 30g bag of Chief Smokey BBQ Biltong
Method
- Start by making you guacamole by adding the avocado, yoghurt, lime juice, salt, pepper and half of the chilli flakes, and half of the coriander. Mash all together until well combined. Now add the biltong and stir through.
- Place your tortillas onto a plate and start by adding guacamole, corn, pickled onions and a few pieces of the bars.
- Repeat this step until all 6 tortillas are filled
