Looking for a high-protein, easy breakfast that feels like a treat? These Baked Protein Pancakes are the ultimate solution! Made with Chief Collagen Protein, they deliver a satisfying dose of protein, and will keep you full for hours. Simply mix, bake, and enjoy—no flipping required.

With 3 irresistible flavour options—Raspberry & Coconut, Almond Croissant, and Choc Peanut Butter—you can switch things up to match your cravings. Perfect for meal prep, busy mornings or a post-workout refuel.

Ingredients

  • 1 egg
  • 1 tbsp ricotta cheese [swap for coconut yoghurt if dairy-free]
  • 2 tbsp Chief Collagen Protein [Creamy Vanilla OR Dark Chocolate]
  • 1/3 cup milk of choice
  • ½ tsp gluten-free baking powder

Now pick your flavour. Choose from 3 of our favourites;

Raspberry + Coconut

Almond Croissant

Choc Peanut Butter

Method

  1. Pre heat your oven to 180° C fan-forced. Place 1 x small round oven-proof glass container on your kitchen bench OR triple the recipe if you’re meal prepping your breakfast for the week. [keep in mind they only last for 3 days, so don’t make more than 3 days worth].

  2. Add egg, ricotta, milk, collagen protein, and baking powder. Mix with a fork to combine.

  3. Now add your flavour, add to a baking tray and bake for 20 minutes.

  1. Allow to cool [approx. 10 mins] garnish with remaining toppings. Enjoy immediately or store in the fridge for up to 3 days for meal prep.

Enjoy!
