Choc Mint Muffins

These dark chocolate muffins are packed full of nutrient dense ingredients, with a rich choc mint flavour. Whether you make them for friends or just for you, they are so yummy that one might not be enough.

Dietary: Gluten-free, Refined-Sugar Free, Protein Rich

Ingredients

  • 2 x overripe bananas, mashed
  • 4 eggs, whisked
  • 2 cups almond meal
  • 1 cup desiccated coconut
  • 2 x Chief Choc Mint Collagen Bars, crushed (not a fan of mint? Switch for another flavour or leave out)
  • 4 heaped tbsp Chief Dark Chocolate Collagen Protein Powder
  • 1/2 cup organic cacao powder
  • 1 heaped tsp gluten-free baking powder
  • 250g organic butter, melted (can use coconut oil if dairy-free)
  • 1/3 cup of pure maple syrup or raw honey
  • 1 tsp organic vanilla essence
  • 1 tsp gluten-free baking powder   

    Method

    1. Preheat your oven to 180°C fan-forced and line a muffin tray with reusable muffin cups.
    2. In a large mixing bowl combine all dry ingredients with a wooden spoon.
    3. In a separate mixing bowl, combine the wet ingredients with a fork. once combined, pour into the dry ingredients, using a wooden spoon to combine.
    4. Spoon mixture into the muffin cups and garnish with 1 x crushed Chief Choc Mint Collagen Protein Bar.
    5. Bake for 20-25 minutes until cooked through, testing with a skewer rest before removing from the oven.  
    6. Allow the muffins to cool completely before removing the muffins from the muffin cups.
    7. Store in the fridge for up to 5 days, or freeze in individual servings in airtight containers.
