This bold, brothy bowl is your fast-pass to flavour and gut support. Inspired by the soul-soothing magic of Vietnamese pho, we’ve dialed up the nourishment and trimmed down the prep time. Think collagen-rich bone broth, fragrant spices, leafy greens, and our protein-packed. Chief Brisket Bar—all coming together for a quick meal that’s as healing as it is delicious. Ingredients

2–3 star anise

1 cinnamon stick (or equivalent amount crushed)

1 cardamom pod

1 tsp coriander seeds

½ brown onion, sliced

1 garlic clove, minced

1 knob fresh ginger, minced

½ red chilli, finely chopped (optional)

750 mL beef bone broth
-
1 tbsp tamari
-
1 tsp fish sauce

1 Chief Brisket Bar
-
1 portion rice noodles
-
Handful bok choy, halved
-
Fresh mint & coriander
-
1 spring onion, chopped

Lemon wedge, to serve
Directions
In a pot over medium heat, toast the star anise, cinnamon, cardamom, and coriander seeds for 1–2 minutes until fragrant.
If you have a spice bag, you can place the toasted spices into it now for easy removal later.
Add the onion, garlic, ginger, and red chilli. Sauté for 3 minutes until softened and aromatic.
Pour in the beef bone broth, tamari, and fish sauce.
Add the brisket bar directly into the broth and gently break it up with your spoon. Let the broth simmer.
Meanwhile, pour boiling water over your rice noodles in a separate bowl and let them soften according to packet instructions.
Prep your serving bowl with bok choy, fresh mint, and coriander (or whichever fillings you prefer)
Once the brisket bar has broken apart, remove the whole spices or spice bag.
Add your softened noodles to the bowl, pour over the hot broth, and top with spring onion and a squeeze of fresh lemon juice.
