Ingredients

  • 1 egg 

  • 1 tbsp ricotta cheese [swap for coconut yoghurt if dairy-free] 

  • 2 tbsp Chief Collagen Protein [Creamy Vanilla OR Dark Chocolate]  

  • 1/3 cup milk of choice  

  • ½ tsp gluten-free baking powder

  • 1/3 cup raspberries

  • ¼ cup shredded coconut + extra to garnish

  • ½ tsp organic almond extract  

  • ¼ cup flaked almonds + extra to garnish

  • 1 tbsp yoghurt [to garnish]

  • 1 tbsp natural peanut butter 

  • 1 tbsp roasted peanuts, to garnish 

  • *Use Chief Dark Chocolate Collagen Protein 

Directions

  1. Pre heat your oven to 180° C fan-forced. Place 1 x small round oven-proof glass container on your kitchen bench OR triple the recipe if you’re meal prepping your breakfast for the week. [keep in mind they only last for 3 days, so don’t make more than 3 days worth]. 

  2. Add egg, ricotta, milk, collagen protein, and baking powder. Mix with a fork to combine. 

  3. Now add your flavour, add to a baking tray and bake for 20 minutes. 

  4. Allow to cool [approx. 10 mins] garnish with remaining toppings. Enjoy immediately or store in the fridge for up to 3 days for meal prep.
