Chief Chocolate Collagen

Ingredients

  • 350g cooked and cooled organic rice (I used basmati, but most varieties would work well.)

  • 1 cup coconut milk 
  • 1 cup milk of choice (I used cows milk)
  • 100g dark chocolate, roughly chopped
  • 4 tbsp Chief Chocolate Collagen
  • 1 tbsp cacao powder
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 3 tsp ground ginger
  • Pinch sea salt
  • 1–2 tbsp maple syrup (optional)

Directions

  1. Heat a medium saucepan over medium heat and add a small knob of butter.
  2. Add the cooked rice and cook for 1–2 minutes, stirring regularly, until lightly toasted and fragrant.
  3. Pour in both milks and add vanilla extract, ground ginger, sea salt. Stir well and bring to a gentle simmer.

  4. Add the dark chocolate, cacao powder & Chief Chocolate Collagen and continue stirring until melted.

  5. Whisk until fully combined and silky smooth.
  6. Allow the pudding to gently simmer for 5–10 minutes, stirring regularly, until thickened and creamy.
  7. In a small bowl whisk together the egg yolks.
  8. Gradually whisk a few spoonfuls of the hot pudding into the yolks to temper them.
  9. Pour the tempered yolks back into the saucepan and stir continuously for 1–2 minutes until glossy and silky.
  10. Taste and add maple syrup if desired.
  11. Divide between bowls and serve warm.
