This is the steak I make whenever my period is either coming up or has arrived or anytime I feel low-energy, crampy, or like my body needs some serious menstrual nourishment. Grass-fed steak is rich in heme iron, B12, zinc + omega-3s, which help with energy, hormonal balance, cramping and mood during menstruation.


The chimichurri is blended with collagen, adding glycine + proline to support gut lining repair, calm inflammation, and relax the nervous system which is everything I am needing when I want to support my period.

Ingredients

    • 1 cup parsley (packed) 
    • ½ cup coriander (packed) 
    • 3–4 garlic cloves 
    • Juice of 1 lemon 
    • ½ tsp chilli flakes 
    • ½ tsp sea salt 
    • Black pepper 
    • 3 tbsp (50g) unflavoured collagen 
    • ½ cup olive oil (added straight in)

    • 2 tsp maple syrup 

    • pinch dried or 2 sprigs fresh oregano 

    Directions

    1. Add parsley, coriander, garlic, lemon zest, chilli flakes, salt, pepper + collagen to a food processor. Pulse 4–5 times. 

    2. Add lemon juice, olive oil + 2 tsp maple syrup (optional). Pulse 2–3 times until well combined but not totally smooth

      1. Bring steak to room temp for 20 minutes, Season generously with salt + pepper. Grill on high heat

      2. 3–4 mins/side (medium-rare)
      3. 4–5 mins/side (medium)
      4. Rest 5 minutes (essential). Slice + spoon chimichurri over the top.

      3. Cook steak: 3–4 mins/side for medium-rare
      4. Rest 5 minutes. Slice + spoon chimichurri over the top.
