This granola is the perfect topper to any yogurt bowl, smoothie bowl or an easy and quick snack. Plus, it features the Chief Dark Chocolate Collagen Powder so it will leave you glowing from the inside out. 

Serves 10
Cook Time: 30 minutes
Dietary: Gluten-free, protein-rich


Ingredients

  • 3 cups buckwheat kernels  
  • ½ cup Chief Dark Chocolate Collagen Protein Powder 
  • ½ cup flaked almonds 
  • ½ cup coconut flakes  
  • ½ cup pepitas  
  • ½ cup cacao nibs  
  • ¼ cup chia seeds  
  • 1 tsp sea salt 
  • 1/3 cup cacao powder 
  • 1 cup natural peanut butter  
  • 1/3 cup extra-virgin olive oil  
  • 1/2 cup maple syrup, or local raw honey

 

Method

  1. Preheat oven to 180C and line 2 baking trays with baking paper. 
  2. Add all dry ingredients to a large mixing bowl, using a wooden spoon to combine. Once combined, add wet ingredients and stir again until the mixture is evenly combined.  
  3. Carefully pour the mixture evenly onto the baking trays and make sure it’s spread evenly on each tray. Bake for 20 minutes or until golden brown. Make sure to toss the mixture near the halfway point to ensure it bakes evenly.  
  4. Allow to cool completely before serving (approx 30 mins). Store in an airtight container for up to 4 few weeks.
