Grilled veggies salad

Serves: 1
Prep time: 5 minutes


  • 1 bag of Chief Biltong
  • 1 medium zucchini
  • 1 small sweet potato
  • 1 carrot
  • 1 small broccoli
  • ½ red onion
  • 100g rocket
  • 100g spinach
  • A handful of fresh basil leaves or any fresh herbs of choice
  • 1 tbsp Fennel seeds
  • Salt
  • Pepper
  • 3 tbsp olive oil
  • 25g (a handful) of raw mixed nuts


    What to do

    Chop all the veggies into bite-sized pieces. Combine everything in a bowl with 2 tablespoons of oil, salt, pepper and fennel seeds, tossing evenly to coat. Cook the veggies in an aluminium pan elevated over a fire. Cook until the potatoes are fork-tender, about 30 to 60 minutes. Mix spinach and rocket in a large bowl, add salt, pepper, 1 tbsp olive oil and fresh basil leaves and toss. Add roasted vegetables, Biltong and sprinkle with nuts.
