Grounding Butter Chicken

Isn’t there just something comforting about the thought of coming home after a long day, to a glorious butter chicken? Whether it’s the fragrant grounding spices or, childhood memories it warms our hearts. We’ve added our Unflavoured Collagen Protein Powder to this family favourite, to help support your gut and skin during winter.  

Serves 4
Cook Time: 45 minutes
Dietary: Gluten-free, protein-rich, dairy-free



  • 6 chicken thighs, cut into small chunks 
  • ½ cup Chief Unflavoured Collagen Protein Powder 
  • 1/2 cup organic coconut cream  
  • 1/2 medium jap pumpkin, cut into cubes 
  • 1 tin organic chopped tomatoes 
  • ½ pineapple, skin removed and roughly chopped 
  • 1 lime, zest and juice + 1 extra time to serve 
  • 1 tbsp ground turmeric 
  • 1 tsp garam masala 
  • 1 tsp ground coriander 
  • 1 tsp ground ginger 
  • ½ tsp ground cinnamon 
  • ½ tsp sea salt  
  • 2 kaffir lime leaves (optional) finely chopped 
  • Good pinch of cracked black pepper 

To Serve 

  • Steamed wild rice 
  • Flat leafed parsley 
  • Fresh lime juice



  1. Add 1 tbsp fat (coconut oil, organic ghee/butter) to the pan over medium heat. 
  2. Once melted, add the spices, kaffir lime leaves, salt, and pepper, using a wooden spoon to combine. 
  3. Once the spices have released their aromas (roughly 2-3 mins) add the chicken and cook for 5 mins until it turns golden brown on the edges. 
  4. Add tinned tomatoes, collagen powder pumpkin, pineapple, lime zest, and juice, stirring to combine. 
  5. Reduce the heat to a low and allow to simmer for 30 minutes. 
  6. Serve with cooked wild rice, a squeeze of fresh lime, a dollop of coconut yoghurt, and a good handful of flat-leaf parsley.
