GINGER

Ingredients

  • 1 cup medium grain organic rice

  • 3 tbsp sliced ginger

  • 3 cloves of garlic, roughly chopped

  • 2 heaped tbsp Chief Nutrition Unflavoured Collagen Protein

  • 1 cup chicken bone broth

  • 1 cup chicken stock

  • 2.5 cups water

  • 2 tbsp fish sauce

  • 2 tbsp tamari sauce

  • 500g cooked chicken breast (to your liking)

  • Handful of roughly chopped spring onion

  • Salt and pepper to taste

  • Handful organic fried shallots (optional) 
  • Drizzle of tamari

Directions

  1. To a large dutch oven or pot, add the ginger, garlic, bone broth, stock, water and collagen. Mix well to combine and bring to a boil. 
  2. Once boiling, add your rice and reduce down to a simmer. Cover and leave for around 20 minutes (you may need to mix intermittently to avoid the rice from sticking to the bottom). 
  3. Add in the spring onion, fish sauce, tamari, salt and pepper. Cover and leave for another 20 minutes. Add in the chicken, mix and cover for another 20 minutes or until the rice has the liquid to your liking. Take off the heat and adjust the seasoning (salt and pepper) again to your liking, and add additional cups of water as needed to loosen. 
  4. Transfer to a bowl to serve. Dig in and enjoy!

  1. Store in an airtight container in the fridge for up to 2 days or in the freezer for a month. (To thaw, simply add a little bit of bone broth to loosen and heat on the stovetop).
