High-Protein Peanut Butter Chocolate Slice

A healthier Reese's-inspired slice with a chewy Chief Peanut Butter Collagen Bar and date base, a thick salty peanut butter-collagen centre, and a crisp dark chocolate top. It is rich, satisfying and no-bake, with extra protein from the Chief bars, collagen powder and peanut butter - perfect for an afternoon snack or a more nourishing chocolate treat.

CHIEF PEANUT BUTTER COLLAGEN BARS + CHIEF DARK CHOCOLATE COLLAGEN POWDER

The Chief bars create an easy, high-protein base without needing to make a separate biscuit layer. Collagen powder boosts the protein in the peanut butter centre and helps create a thick, fudge-like texture. Dark chocolate collagen was used in testing, but vanilla or unflavoured collagen can also work.

PEANUT BUTTER

Provides protein, magnesium, vitamin E and monounsaturated fats. Magnesium contributes to normal nervous system and muscle function, while the protein and fat make the slice more satisfying.

DARK CHOCOLATE

Adds rich chocolate flavour along with magnesium, iron and cocoa polyphenols. It creates a crisp top that contrasts with the soft peanut butter centre.

ALMOND FLOUR

Adds vitamin E, magnesium, fibre and healthy fats while helping the peanut butter layer hold its shape without needing extra oil.

MEDJOOL DATES

Naturally sweeten and bind the base while contributing fibre, potassium and small amounts of minerals.

Ingredients

    For The Base

    • 4 Chief Peanut Butter Collagen Bars
    • 5 Medjool Dates, Pitted

    For The Peanut Butter Filling

    • 1 1/2 cups smooth unsalted peanut butter
    • 1/2 cup Chief Dark Chocolate collagen powder
    • 1/3 cup almond flour
    • Large pinch sea salt

    Chocolate Topping

    • 180g Dark Chocolate
    • Flakey Sea salt

    Directions

    1. Line a small square or rectangular tin with baking paper.
    2. Add the Chief Peanut Butter Collagen Bars and Medjool dates to a food processor. Blend until the mixture becomes sticky and starts to clump together.

    3. Press the mixture firmly and evenly into the base of the lined tin. Refrigerate while you prepare the filling.
    4. Add the peanut butter, collagen powder, almond flour and sea salt to a bowl. Mix until smooth, thick and evenly combined.
    5. Spread the peanut butter filling evenly over the base and smooth the top. Return to the fridge while you melt the chocolate.

    6. Melt the dark chocolate gently until smooth. Pour over the peanut butter layer and spread evenly. Finish with flaky sea salt if desired.

    7. Refrigerate for 1-2 hours, or until completely firm. Slice with a warm, sharp knife

    To Serve / Assembly

    1. Serve chilled or allow the slice to sit at room temperature for 5-10 minutes for a softer peanut butter centre. Cut into 16 small squares for a rich snack-sized serve.

    Waiting Time

    1. Chill for approximately 1-2 hours, or until the peanut butter layer and chocolate topping are firm.

    Storage

    1. Store in an airtight container in the fridge for 5-7 days. Individual pieces can also be frozen for up to 2-3 months; thaw in the fridge before serving.
