Ingredients

  • 2 fillets of wild-caught sustainably sourced barramundi fillets (approx. 800g) (deboned/ with no skin)
  • 2 heaped tbsp Chief Nutrition Unflavoured Whey Protein
  • 1 tbsp extra-virgin olive oil
  • 1/3 cup toasted organic macadamias
  • 2 tbsp organic grass-fed butter (cold)
  • Handful of fresh dill
  • Zest of one lemon
  • Salt and pepper to taste
  • Juice of one lemon
  • More fresh dill and fresh parsley to top (roughly chopped)

Directions

  1. In a food processor, add the macadamias, butter, dill, lemon zest, salt and pepper and Chief Nutrition Unflavoured Whey Protein. Mix until crumbly, but slightly formed (there should still be some bigger chunks of macadamia). Set aside.

  2. To a large saucepan, over medium heat add your olive oil and lightly brown the fillets of barramundi. About 2 minutes each side. Set aside onto a lined baking tray and preheat oven to 180 degrees celsius, fan

  3. Coat the pieces of barramundi evenly with the macadamia crumb. Ensure to pat down to really set it on there. Top with a generous amount of salt and pepper.

  4. Place the barramundi into the oven for 5 to 10 minutes (using the last 2 minutes on the grill setting of your oven for that nice brown colour!). The timing will depend on how thick your fillets are.

  5. Once cooked, enjoy immediately!

To Serve / Assembly

  1. Add the extra chopped fresh dill and basil on top, along with the juice of the lemon.
