Ingredients

    • 1 cup almond meal

    • ½ cup Chief Nutrition Creamy Vanilla Collagen Protein

    • ½ cup tapioca flour

    • ⅓ cup coconut sugar (or pure maple syrup)

    • 1 heaped tsp cinnamon

    • 1 tsp gluten-free baking powder

    • Pinch of sea salt

    • ½ cup yoghurt of choice

    • ½ cup melted butter, ghee, or coconut oil

    • 2 eggs, whisked

    • ½ cup hulled tahini

    • ½ cup coconut sugar + 1 tbsp to garnish

    • ¼ cup coconut milk

    • 1 tbsp Chief Vanilla Collagen Protein or 1 tsp vanilla extract

    • ½ tsp sea salt flakes [to garnish]

    Directions

    1. Preheat oven to 180°C (fan-forced).

    2. In a large bowl, combine almond meal, collagen protein, tapioca flour, coconut sugar, cinnamon, baking powder, and salt.

    3. Stir in yoghurt, melted butter, eggs, and vanilla. Mix until smooth and thick.

    4. Spoon into silicone donut molds. Bake for 15–18 minutes or until golden and set.

    5. Allow to cool for 15 minutes before removing from molds.

    6. Add icing ingredients to a small mixing bowl, and stir to combine.

    7. Carefully spoon the caramel icing over the top, sprinkle with coconut yoghurt and a pinch of sea salt.
