Smokey Scotch Fillet Collagen Chimichurri + Shaved Asparagus Salad

This is a delicious recipe that’s perfect for celebrations year round: This dish combines tender, perfectly seared scotch fillet cooked to perfection in the Solidteknics AUS-ION™ 26cm Frypan – a game-changer for non-toxic, sustainable cooking – and a vibrant chimichurri sauce infused with Chief Collagen for an extra boost of protein and goodness.

Ingredients

Steak 

  • 2 x pieces of grass-fed & finished scotch fillet (room temp)  
  • A good pinch of sea salt flakes  
  • Cracked black pepper, to taste 
  • 1/3 cup organic salted butter, cubed 
  • 5 cloves garlic, skin removed 

Chimichurri 

  • 1 large handful flat-leaf parsley, roughly chopped 
  • 2 heaped tbsp Chief Unflavoured Collagen Protein  
  • 3 tbsp good quality extra-virgin olive oil 
  • 2 tbsp organic apple cider vinegar 
  • 1 clove of garlic, finely grated  
  • 1 tbsp smoked paprika 
  • A good pinch of sea salt flakes 
  • Cracked black pepper, to taste  

Salad 

  • 1 bunch of asparagus, shaved (use a vegetable peeler and start from the base of the spear) 
  • 2 large handfuls of rocket  
  • 1/3 cup shaved pecorino cheese or good quality parmesan cheese 
  • 1/3 cup toasted pistachio nuts 

Salad Dressing 

  • ½ cup good quality extra-virgin olive oil  
  • 2 tbsp organic apple cider vinegar 
  • 1 tsp local raw honey 
  • Pinch of sea salt flakes 
  • Cracked black pepper, to taste 

 

Method:

  1. Take the steak out of the fridge 30 minutes prior to bring to room temperature. Dry steaks: Pat dry with paper towels. 
  2. Place your Solidteknics Cast Iron Pan over high heat until it is very hot (you should see smoke). 
  3. Season: Sprinkle each side of the steak generously with salt and pepper, then immediately place in the pan. Cook for 2 – 2.5 minutes until you get a great crust on one side, then flip to cook the remaining side. 
  4. Push steaks to one side and add the butter and garlic. As soon as the butter is melted, continuously spoon the butter over the steak until it’s cooked to your liking (approx 2 minutes in total for medium rare)
  5. Transfer steak to a plate and allow to rest for 5 minutes while you prepare the rest of the dish. 
  6. To make the salad dressing, add all of the dressing to a glass jar, secure with it’s lid and shake to combine. Now add the shaved asparagus and rocket to a large mixing bowl, pour over the dressing and use your hands to combine. 
  7. Transfer the salad into your serving dish, sprinkle over avocado, pistachio nuts and shaved pecorino cheese. 
  8. Carefully slice the steak into strips. Add all of the Chimichurri ingredients into a small mixing bowl, and stir to combine. Drizzle over the steak and enjoy alongside your shaved asparagus salad.
