Raspberry Lemon Tart Crumble

Ingredients

Raspberry Layer 

  • 680g frozen raspberries 
  • 1/2 cup white monk fruit 
  • 2 tablespoons almond flour 
  • 1 tablespoon arrowroot 
  • 1 lemon, juice & zest  

Crumble Layer 

 

Method

  1. Preheat your oven to 180ºC. Line a 23x23cm baking tray with baking paper. 
  2. Place the raspberries in a large colander. Run warm water over them for about a minute, then let them drain completely until softened and almost dry. 
  3. In a mixing bowl, combine the raspberries with monk fruit, almond flour, arrowroot, lemon juice and zest. Stir gently until evenly coated. 
  4. For the crumble layer: In another bowl, mix the oats, almond flour, mink fruit, baking powder and salt. Crumble Chief’s Collagen Lemon Tart bars using your fingers. Add melted butter and combine until the mixture resembles coarse crumbs.  
  5. Press two-thirds of the crumble mixture evenly into the bottom of the prepared tray. Bake in the preheated oven for 10 minutes. 
  6. Remove the tray from the oven and spread the raspberry mixture over the baked base. Sprinkle the remaining crumble evenly on top, adding a touch of extra lemon zest. 
  7. Return the tray to the oven and bake for an additional 25–30 minutes, or until the top is golden and crisp. 
  8. For firmer bars, refrigerate before cutting into 9 pieces. If you prefer warm and soft bars, slice and serve straight away.
