Spring Beef Brisket Salad

If you’re anything like us sometimes the thought of cooking after a long day is the last thing you want to do. So, for days like those this recipe is here to save you. We always have a Beef Brisket Bar in the cupboard, so a high-quality protein source is never far away. Not only is this salad super quick and easy to prepare, but it’s an easy way to help boost your daily iron and protein intake, and it’s great for your gut thanks to the citrus sheep yoghurt sauce. Enjoy!

Serves 1
Cook Time: 5 minutes
Dietary: gluten-free, protein-rich, low carb

 

Ingredients

  • 1 x Chief Traditional Beef Bar
  • ½ cos lettuce, washed
  • ½ Lebanese cucumber, sliced
  • ½ tbsp avocado oil/extra-virgin olive oil
  • ½ lemon juiced
  • Salt and pepper to season


Citrus Sauce 

  • 2 heaped tbsp organic sheeps yoghurt (we love this one) 
  • 1 lemon, zested  
  • 1 lemon, juice 
  • ¼ cup fresh dill, stems removed  
  • Salt and pepper to season 

 

Method

  1. Place all of the citrus sauce ingredients in a small mixing bowl, and stir with a spoon to combine. 
  2. Dollop and the sauce it into your serving dish, placing the lettuce on top, followed by the spring onions and cucumber. 
  3. Carefully break up your beef bar and place on top of the salad. 
  4.  Drizzle over avocado oil, lemon juice and season with salt and pepper.
