Mint Chip ice cream was always my go to on cozy nights in, this is my favourite easy, healthy substitute that still satisfies my sweet tooth. This Choc Mint Collagen Ice Cream is thick, creamy, and protein-rich for glowing skin and a healthy gut.

Ingredients
- 1 cup Nutty Bruce Almond & Coconut Milk
- ½ cup frozen banana, or avocado
- 2 heaped tbsp Chief Dark Chocolate Collagen Protein Powder
- 1 tbsp organic cacao powder
- 1 handful of baby spinach
- 1/4 cup fresh mint leaves
- 1 tbsp hulled tahini
- 1 cup of ice
Toppings
- 1/4 cup cacao nibs
- 1/2 Chief Choc Mint Collagen Bar, crushed
Method
- Place all smoothie ingredients into a high-speed blender, and blend until smooth.
- Pour into a serving bowl, and top with cacao nibs, ½ crushed Chief Choc Mint Collagen Bar, and fresh mint.
Enjoy immediately.
