This is one of our favorite recipes when you want something quick and easy but still elevated. Salmon is one of our go-to proteins as it is has high levels of omega-3 fatty acids, essential nutrients and antioxidants. Wild-caught salmon is naturally richer in these heart-healthy fats and free of the artificial additives often found in farmed fish, making it a top choice for anyone looking to enjoy the nutritional benefits.

Ingredients
Salmon Crust
- 2 fillets salmon (about 4-6 ounces each)
- 1/4 cup toasted almonds, roughly chopped
- ¼ cup fresh dill, roughly chopped + extra to garnish
- 4 tbsp Chief Unflavoured Collagen Protein
- ¼ cup freshly grated Pecorino Cheese or Parmesan
- 2 tbsp extra-virgin olive oil
Asparagus
- 1 bunch asparagus
- 2 tbsp extra-virgin olive oil
- Salt + pepper, to season
- 4 tbsp Sour Cream
Method
- Preheat oven to 180C fan-forced and line a baking tray with baking paper.
- In a mixing bowl combine chopped almonds, Collagen Protein Powder, dill, olive oil, salt and pepper. Stir with a spoon to combine.
- Place salmon fillets on top of your lined baking tray. Spread the mixture on top, until the fish is evenly coated. Add the asparagus, drizzle with 1 tbsp olive oil, and season with salt and pepper.
- Bake for 15 minutes, or until cooked to your liking depending on the thickness of your salmon fillet.
- To serve place 2 tbsp Sour Cream on each plate, sprinkle over remaining dill and place the salmon and asparagus on top.
