Easy GF Ricotta & Basil Gnocchi with Roasted Tomato Sauce

This recipe is a simple yet satisfying way to enjoy homemade comfort food with a fresh, wholesome twist featuring Chief Unflavoured Collagen. The gluten-free ricotta and basil gnocchi are soft, flavourful, and easy to make, while the roasted tomato sauce adds a rich, savoury element that brings everything together. This recipe is perfect for a weeknight dinner or a special occasion.

Ingredients:

Roasted Tomato Sauce 

  • 1kg Roma tomatoes, cut in half 
  • 2 tbsp Extra-virgin olive oil 
  • ¼ cup balsamic vinegar  
  • Sea salt & black pepper to season 
  • 2 cloves garlic 
  • 400g tomato passata 
  • 1 tsp chilli flakes (optional) 

 

Gluten-free Gnocchi  

  • 1 organic egg, whisked 
  • 500g firm ricotta cheese 
  • ½ cup almond meal 
  • ½ cup Chief Unflavoured Collagen Protein  
  • ¼ cup tapioca flour + 1 /2 cup to coat bench top when rolling 
  • Sea salt & black pepper to season 
  • 1 cup fresh basil, finely chopped  
  • 1 large handful fresh basil to serve  

 

Method

  1. Preheat oven to 160° C. Place sliced tomatoes on a baking tray, drizzle over olive oil, balsamic vinegar, season with salt and pepper. Roast for 45 mins 
  2. Once the tomatoes have roasted for 30 mins, you can start the gnocchi. In a mixing bowl, add ricotta, almond meal, chopped basil, tapioca flour, egg, salt, and pepper. Stir with a wooden spoon to combine. Use your hands to create a ball, and then divide the ball into quarters and roll into a sausage shape. 
  3. Sprinkle a handful of tapioca flour onto your clean kitchen bench and place ¼ of the mixture on top. Use your hands to roll the dough out lengthways, using a sharp knife to cut into 2cm pieces. 
  4. Fill a large saucepan with water, and bring to a simmer [small bubbles are forming]. Carefully add the gnocchi to the saucepan and cook until they start to rise to the surface [approx. 3 mins]. 
  5. In a large saucepan add a tablespoon of olive oil and minced garlic. Cook for 2 mins, then add the tomato passata and roasted tomatoes and cook for another 2 minutes. Carefully add gnocchi, and stir through with a wooden spoon. 
  6. Divide into serving bowls and garnish with fresh basil.
