Preheat oven to 160°C (320°F) and line a baking tray with baking paper.
In a large bowl, combine buckwheat flour, almond or sunflower meal, Omega Seed Mix, collagen, sunflower seeds, fennel seeds, chilli flakes, and sea salt.
Add olive oil and water. Mix until a thick dough forms. Spread mixture evenly onto the lined tray, about 5mm thick. Score into cracker shapes with a knife.
Bake for 35–40 minutes or until firm and golden. Cool completely before using your hands to snap into crackers.
Store in an airtight container for up to 3 months.
