These Gluten-Free Coffee Collagen Cookies are the ultimate pick-me-up. Made with Chief Nutrition’s Hazelnut Brownie Collagen Bars,they’re naturally high in protein to nourish your skin, gut, and joints—without compromising on indulgence. Soft, fudgy, and finished with a glossy chocolate drop,they’re the kind of cookie that feels like a treat while fueling your body. Enjoyed best alongside your daily collagen coffee.

Ingredients

  • 3 x Chief Collagen Protein Hazelnut Brownie Bars (crumbled in your hands) 
  • 1 1/2 cups hazelnut meal 
  • 1/2 cup tapioca flour  
  • 1/4 cup ghee, melted 
  • 1 espresso shot 
  • 1/4 cup hulled tahini 
  • 1 tsp ground cinnamon  
  • pinch of sea salt

  • 1 Block of Dark Chocolate 
  • 1 Tbsp of Ghee or Coconut Oil

Directions

  1. Pre-heat oven to 180 °C degrees fan-forced and line a baking tray with baking paper.
  2. Add all the cookie ingredients to a medium bowl, and stir to combine.
  3. Scoop 1 tbsp of mixture into your hands, roll into a ball and place onto the lined baking tray. Repeat this step until you have used all of the mixture
  4. Gently place your thumb into the middle of each cookie to create enough room for the chocolate. Now gently press down on the cookie to flatten.
  5. Place cookies in the oven, and bake for 10-12 minutes, until the edges are lightly golden brown.
  6. To make the choc drops, place the chocolate and ghee in a small saucepan over a medium heat. Once melted, take off the heat.
  7. Once cookies have cooked, add your chocolate to the middle and place in the fridge for the chocolate to set.
  8. Before devouring make sure to pair this with your collagen coffee!
