We all love a good Banana Bread, but if we are honest, it often has the sugar content of a classic cake. So, we thought we’d share our latest creation of a true banana bread that features our Creamy Vanilla Collagen Powder for an extra boost. Yep, it’s gluten-free and refined sugar-free of course. You can thank us later!
Makes 1 loaf
Cook Time: 45 minutes
Dietary: Gluten-free, protein-rich, refined sugar-free
Ingredients
- 2 cups almond meal
- 1 cup shredded coconut
- 1/2 cup Chief Creamy Vanilla Collagen Protein
- 1 large handful of walnuts + another handful to garnish
- 1 heaped tsp ground cinnamon
- 1 heaped tsp ground ginger
- 1 tsp gluten-free baking powder
- Pinch sea salt
- 3 eggs, whisked
- 3 overripe bananas, mashed
- 1/4 cup organic ghee, melted (can sub for extra-virgin olive oil)
- 1/4 cup raw honey, or pure maple syrup
- 2 tsp vanilla extract
Method

Preheat your oven to 160°C fan-forced and line a loaf tin with baking paper

In a large mixing bowl combine almond meal, coconut, collagen, walnuts, cinnamon, ginger, salt, and baking powder.

In a separate mixing bowl combine banana, honey, ghee, and eggs with a fork, Once combined, pour into the dry ingredients, using a wooden spoon to combine.

Spoon mixture into a lined loaf tin and garnish with a handful of walnuts.

Bake for 45 minutes until cooked through, testing with a skewer rest before removing from the oven.
- Cool completely before removing from the tin.
- Store in the fridge for 5 days, or freeze in individual servings in an airtight container.
