Golden Chicken Ginger Collagen Patties

These golden chicken ginger collagen patties are so herby and so juicy and so crispy all at once. Made with chicken thighs, fresh ginger, garlic, spring onion, herbs and Chief Unflavoured Collagen Powder. 

The mixture is made in a food processor, so you don’t need to finely chop everything by hand, just roughly chop, pulse into a mince-like texture, shape into patties and pan-fry until golden. 

They’re served with a simple lemon olive oil yoghurt, a pistachio sesame herb sprinkle and a fresh rocket salad with lemon and olive oil.

CHICKEN & CHIEF UNFLAVOURED COLLAGEN POWDER 

Chicken and collagen provide protein and amino acids, which are essential for liver detoxification pathways, tissue repair and overall nourishment. The liver needs adequate protein to carry out many of its processing and clearing functions, so this recipe is intentionally grounding and protein-rich rather than light or restrictive. 

GINGER 

Ginger is especially helpful for liver and lymph because it makes the meal feel warming and circulation-supportive. The lymphatic system doesn’t have its own pump like the heart does, so it relies on movement, hydration, muscle contraction and healthy circulation, making warming ingredients like ginger a beautiful addition. 

GARLIC & SPRING ONION 

Garlic and spring onion add that savoury yummy depth while bringing in allium compounds that support digestion and liver-focused meals. Garlic contains sulphur compounds, which are important for the liver’s natural detoxification processes. They also make the patties taste vibrant and satisfying without needing heavy ingredients. 

LEMON OLIVE OIL YOGHURT 

The lemon olive oil yoghurt adds freshness, acidity, protein and healthy fats. Lemon juice brings brightness and supports digestion, while olive oil adds monounsaturated fats and polyphenols. Healthy fats are important for satisfaction and also support bile flow, which is a key part of digestion and the body’s natural elimination pathways. 

ROCKET & FRESH HERBS 

Rocket and fresh herbs bring bitterness, antioxidants and a mineral-rich finishing element. Bitter greens like rocket are especially beautiful for a liver-focused recipe because bitter flavours help support digestion and bile flow.  

Ingredients

    • 500g boneless chicken thighs (We used skin off but both should work)

    • ½ cup Chief Unflavoured Collagen Powder

    • 1 large thumb fresh ginger, approx. 30g, roughly chopped

    • 3 garlic cloves, roughly chopped

    • 2 spring onions, roughly chopped

    • ¼ cup coriander

    • ¼ cup parsley

    • 1 egg

    • 1 tbsp tamari

    • Zest of 1 lemon

    • Olive oil or ghee, for cooking

    • ½ cup thick Greek yoghurt

    • Squeeze of lemon juice

    • 1 tsp extra virgin olive oil

    • 2 tbsp pistachios, finely chopped

    • 1 tbsp sesame seeds

    • 1–2 tbsp coriander or parsley, finely chopped

    • Extra lemon zest

    • Pinch flaky salt

    • Rocket

    • Lemon juice

    • Extra virgin olive oil

    Directions

      1. Add the chicken thighs, Chief Unflavoured Collagen Powder, ginger, garlic, spring onion, coriander, parsley, egg, tamari, lemon zest and pepper to a food processor.

      2. Pulse until the mixture forms a mince-like texture. Try not to over-blend it into a paste, you want it sticky and cohesive, but still with some texture.

      3. Shape the mixture into small patties. Keep them slightly smaller and flatter rather than too thick so they cook evenly and get more golden surface area.

      4. Heat a little olive oil or ghee in a pan over medium heat.

      5. Cook the patties for 4–5 minutes per side, or until golden and cooked through. The centre should be fully cooked with no pink remaining (internal temp of 75 degrees Celsius)

      6. Remove from the pan and allow to rest for a few minutes.

      1. Add the Greek yoghurt, lemon juice and olive oil to a small bowl.

      2. Mix until smooth and creamy.

      1. Mix the pistachios, sesame seeds, herbs, extra lemon zest and flaky salt together in a small bowl.

      1. Add the rocket to a bowl.

      2. Dress with lemon juice and extra virgin olive oil just before serving.

      3. Toss gently.

      1. Dip one side, or around one third of each patty, into the lemon olive oil yoghurt.

      2. Then either dunk or sprinkle the pistachio sesame herb mix over the yoghurt side so it sticks.

      3. Serve with the rocket salad and extra lemon wedges if using.

      1. Store cooked patties in an airtight container in the fridge for up to 3 days.

      2. Reheat gently in a pan with a little olive oil or ghee until warmed through and golden again.

      3. The lemon yoghurt, pistachio sprinkle and rocket salad are best stored separately and added just before serving.
