Here's a quick and easy salad for lunch, using our biltong as a prep free protein source!
Serves: 1
Prep time: 5 minutes
Ingredients
- One bag of Chief Biltong
- Pink Himalayan Salt
- Freshly ground black pepper
- 30 ml extra-virgin olive oil
- Juice of 1/2 large lemon
- 100 g baby rocket
- A few leaves of green kale
- One peach, thinly sliced (can replace with nectarines)
- 1-2 tbsp cranberries
- 1 tbsp of shredded fresh dill
- Dressing: Whisk olive oil and lemon juice in a small bowl and season with
- salt and pepper.
What to do
Wash and shred kale with your hands, drizzle with olive oil and massage for a bit. Add salt, dill and rocket and mix through. Drizzle with dressing, add peaches, cranberries and biltong and gently toss.
