These GF sweet potato brownies are such a delicious treat. They’re made with whole food ingredients and boosted with Chief chocolate whey protein powder to give them a nice hit of quality protein. They’re gluten free, egg free, and come out fudgy and delicious (the dream!). Each brownie has around 11g of protein, so they’re perfect for an afternoon pick-me-up or a snack that actually keeps you satisfied. Enjoy them as they are, or add fresh berries and cream if you’re feeling a little extra.
Cut the sweet potato in half lengthwise and place face down onto a lined baking sheet.
Place into the oven and bake for 45 mins or until soft.
Remove the sweet potato from the oven and allow to cool until you can easily peel the skin off them. Scoop the cooked sweet potato into a 1 cup + ¼ cup measuring cup.
Now add the sweet potato into a food processor with the other ingredients (except for the chopped chocolate). Blend to combine.
Pour into the pre-lined tin and sprinkle the chopped chocolate on top. Press the chocolate into the top of the brownie and spread it out evenly.
Place into the oven and bake for 30 minutes.
Remove from the oven and allow to cool.
Serve with berries and cream, or enjoy them on their own.
